Bestest Banana Bread

This is a staple recipe at our house. My #BatchofBoys and I make it on a weekly basis. That’s a lot of banana bread, but it’s the perfect way to use up overripe bananas, especially when it’s the “bestest” and you have a lot of people who like to share❣️

Tried & True Tips

  • “The Mix” is one part ground flax, one part chia, one part wheat germ
  • There is no such thing as too ripe bananas for this recipe! 🙂
  • If using walnuts or raisins, add 1/2 tsp. nutmeg or cinnamon for a twist.
  • Our favourite combination is dark chocolate bits or carob chips with dried cranberries.

WHAT YOU NEED

Bananas, 3 medium, ripened

Honey

Oil

Vinegar or lemon juice

Sea salt

Eggs

Milk (any – skim, 1%, almond)

Baking soda

“The Mix” (optional)

Whole wheat flour

Chocolate chips, Raisins, Dried Cranberries, Carob Chips, Walnuts (optional)

1.

Preheat oven to 375 °F. Prepare two 9”x5” loaf pans with oil and/or parchment.

2.

In a mixer or bowl, combine bananas, oil, and then honey. Mix well.

3.

Add vinegar, sea salt, and eggs.  Mix well.

4.

Add milk, baking soda, “The Mix” and flour.  Mix on low speed until combined.

5.

If desired, add any combination of chocolate chips, raisins, carob chips, dried cranberries and walnuts.

6.

Divide and pour into loaf pans.  Bake for 1 hour.  For last 15 minutes cover with foil to    prevent tops from getting too dark.
